Socal's Best Hong Kong Egg Waffles

           Growing up in Hong Kong, one of the earliest and most fond memories I had were egg waffles. I remember them being crispy, yet fluffy within, and the perfect on-the-go snack. Fast forward years later, I arrived in the US with my family in search of a new life carrying with me the customs, culture, and heritage of Hong Kong. Growing up an immigrant, there wasn’t anything wrong with the snacks the States had to offer but something was tugging at my heart strings for something familiar, something that my newfound home couldn’t provide. It was at that exact moment that I realized that I was wishing for the egg waffles of Hong Kong. I remember growing up in the streets of Wan Chai when regulations were more loosely enforced hearing vendors yell, “Zau Gwai!” In essence meaning, “RUN! The Police are coming!” Then I’d hear the clanging of the wheels as all the vendors would rush past me pushing their wheeled carts in hopes of not being fined and losing a day’s worth of work. 
            Finally, during my twenties I came to the realization that the offerings here in the States weren’t representing the egg waffle as I remembered them. The Hong Kong cafes of San Gabriel as well as those in Rowland Heights didn’t do my favorite snack justice. And here we stand today, something that started as a joke which became a reality now known as The Bubble Waffle. My hope now, is to recreate that same joy for each and everyone of you that I experienced as a boy taking that first bite into an egg waffle.
